Parm/Garlic Flatbread

I made pizza dough the other day and had some leftover while a Gold Cup soccer game was on I whipped this flat bread up. (p.s. soccer is life in our house) 
My husband, son and I chomped it up while we cheered on team USA....they fell flat. (get it??, ha!)

Zucch/Corn

This zucchini and corn side dish is so flavorful. Lime juice, Parmesan say what??!! It somehow comes together to make this dish POP! Fresh corn is a MUST. I do not stand for crummy old frozen/canned corn.

Lemon Butter Chicken

I made it for Father's Day for my parents and they loved it as much as my husband and kids. It's SOOOO good and really good served with rice because the sauce is so flavorful. I always double it because the leftovers taste just as good.

I LOVE dip. In fact I consider it a full meal, unfortunately my husband does not but he loves this one.
This recipe is made with bacon bits....I cooked up some fresh bacon when I made and it was delish!

Bacon Wrapped Rosemary Chicken



2 Chicken breasts (I cut mine in half)
Bacon
2 T Fresh Rosemary, chopped (I have a plant in my garden)
2 garlic cloves, chopped
Olive Oil
Salt & Pepper
Balsamic Vinegar
 
in a shallow dish combine Olive Oil, garlic, and rosemary then add chicken to marinade for about 10 minutes.
Remove chicken and wrap with one or two pieces of bacon.
Season with salt & pepper.
Bake on baking sheet lined with foil for 40 minutes at 375*
When done serve with a drizzle of balsamic vinegar.
My husband and kids really liked this :)

Caprese Salad

 


Sliced tomato (I used Roma) sliced whole mozzarella, fresh basil leaves (these beauties are from my Mom's garden) drizzle with Balsamic vinegar & season with salt & pepper. Seriously SOOO good! My baby Kora (she is 13 months) liked eating the mozzarella.

Hummus

I love hummus. No that is not right, I LOVE hummus!
I always buy it but I decided to try to make my own today & I am so glad that I did. It's easy and taste soooo good!



1 can (15.5 oz) Garbanzo Beans (a.k.a chick peas)
1/4 cup extra-virgin olive oil
juice of 1/2 a lemon
1 T Sea Salt
2 garlic cloves
1/4 tsp. cumin
 
put it all in a food processor (I used my baby food maker) and BOOM!
Yummy Hummus!
Serve with pita chips or veggies.

Bacon & Brussel Sprouts

The thought of brussel sprouts just weirds me out UNTIL we had them like this.
I grabbed a few handfuls from the store...so about 20 of them.
Rinse off, cut the ends off & cut into quarters
(I also peeled the outside layers off that were floppy looking)
thinly slice one shallot (like a small onion)
cut 4 slices of bacon into small pieces
add 1 T olive oil to skillet over medium heat
add bacon, shallots & cook until bacon is done
add brussel sprout to bacon drippings in pan and cook until tender (only takes a few minutes)
season with salt & pepper
