Parm/Garlic Flatbread

I made pizza dough the other day and had some leftover while a Gold Cup soccer game was on I whipped this flat bread up. (p.s. soccer is life in our house) 
My husband, son and I chomped it up while we cheered on team USA....they fell flat. (get it??, ha!)

Rolls baby!

I made these rolls on Thanksgiving.

They are AMAZING! So easy compared to other rolls I've tried in the past. Kali ate about a dozen of them. My whole family loved them.

Orange Marmalade Rolls

I made orange marmalade rolls to giveaway to friends for Christmas. I ended up only giving two away and keeping the rest. They were SO good! I got the recipe here
on the Pioneer Woman's blog. But instead of making the dough from scratch I used frozen dough you can buy at the store. It saved me a lot of time & I've made them both ways and there is not much difference.

Pretzels

We love eating pretzels when we go to the mall so I wanted to make my own at home. They are SO easy and YUMMY!
*recipe from Melskitchencafe.com

2 1/2 cups all purpose flour
1/2 t salt
1 t sugar
1 package of instant yeast
1 cup warm water

Mix ingredients in bowl (I used my kitchenaide with the bread loop) Knead the dough for 5 minutes. Lightly flour dough and place in plastic bag....close and let sit for 30 min.
Preheat oven to 500*
Roll your dough into long "snakes" and twist into pretzel shape. Dip into mixture of 1/2 cup warm water mixed with 2 T of baking soda.
Bake for 8 min
Brush with melted butter and top with course salt--enjoy!

Chicken Gyros with Tzatziki

I have never had Greek food before so when I saw this recipe for Chicken Gyros I thought I would give it a try and I am SOOOO glad I did. I also made the homemade pitas rather than using store bought. And, instead of using the tzatziki recipe on the same website I made it the way my friend, Monika showed me.
Tzatziki
1/2 large cucumber or 1 whole small cucumber, peeled & grated into bowl
cover with 1 tsp. of salt (helps suck moisture out)
add 1 cup plain greek yogurt
1/2 tsp pepper
1 garlic clove minced or pressed
put in fridge at least 1/2 hour before serving
YUM!

It was so nice outside we had to eat al fresco!

and my kids LOVED it!

Kali brought out some blueberries & carrots to jazz hers up a bit.

Fresh Tomato Sausage Pasta with Garlic Bread


Fresh Tomato Sausage Pasta

8 oz penne pasta, cooked


8 oz sweet Italian sausage


2 t olive oil


1/2 cup sliced yellow onion

2 t minced garlic

5 tomatoes chopped (Roma)

1/2 cup cubed mozzarella

1/4 salt

1/8 pepper

torn basil leaves about 5 large leaves (NO dry basil)

Cook pasta, heat olive oil skillet over med heat. Remove sausage from casings, add to pan. Add onion cook until sausage is browned. Add garlic, cook 2 min. Stir in tomatoes, cook 2 min, remove from heat & stir in penne pasta (drained)add cheese, salt &pepper & basil. Toss & serve!

Garlic Bread

1/2 loaf french bred, sliced

4 T of melted butter

1 T chopped garlic

Heat oven to 375* -slice bread, add garlic to melted butter and pour over bread....making sure to get in between slices. Wrap in foil and cook 15 min until bread is warm through.

Red Lobster Cheese Garlic Biscuits

2 cups buttermilk baking mix (I use pancake mix from Costco)
2/3 c milk
1/2 shredded cheddar cheese
1/4 butter, melted
1/2 t garlic salt
1/2 t Italian seasoning

Preheat oven 450* combine baking mix, milk, cheese until soft dough forms. Beat for 30 seconds. Drop dough by heaping tablespoons onto cookie sheet. Bake 8-10 minutes until golden brown. Combine butter, garlic salt and italian seasoning and brush over warm biscuits before removing from cookie sheet. Serve warm. YUM!

Strawberry Bread


* I made some little loaves of this bread to give away to friends for Christmas, it is so yummy...Kai loves it! And, it is a Martha Stewart recipe so you know it is dang good!


The recipe for this fruit-swirled quick bread comes from a reader, Debbie Cascio-van Hees, from the Netherlands. It calls for fresh strawberries, but you can substitute thawed frozen berries. Softened cream cheese is a delicious spread.
Prep: 10 minutesTotal: 1 hour 10 minutes
Ingredients
Serves 8
5 tablespoons plus 1 teaspoon unsalted butter, softened, plus more for pan
1 pint strawberries, rinsed, hulled, quartered, and mashed with a fork
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
2 large eggs
Directions
Preheat oven to 350 degrees. Butter an 8-by-4-inch loaf pan. In a small saucepan, bring strawberries to a boil over medium heat. Cook, stirring, 1 minute. Set aside.
In a medium bowl, whisk together flour, baking soda, cinnamon, baking powder, and salt; set aside. With an electric mixer, cream butter, sugar, and eggs in a mixing bowl until light and fluffy. Add flour mixture alternately with 1/3 cup water, beginning and ending with flour. Fold in reserved strawberries.
Scrape batter into prepared pan, smoothing top. Bake until a toothpick inserted in center comes out clean, about 1 hour (tent with foil after 45 minutes if top is getting too dark). Cool in pan 10 minutes. Run a knife around edges; invert onto a rack. Reinvert; cool completely.

Cedar Maiden Fry Bread

Just so you all know Cedar Maiden is my Hopi name, when I was just a young sprout my parents took me to the Hopi reservation and my Great Grandfather gave me the name in a little ceremony. It is pronounced Ho-kwap-nim in Hopi (I am not totally sure if it is spelled this way but this is how you say it) My mom is Pinon Maiden, my brother Cody is Pile of Wood (exciting huu?) and my youngest brother is Fire Spark (very cool) Since I married a non-Indian my children will not receive a name because I am the bare minimum of Hopi (1/4) that can be admitted to the tribe. Okay, on the the recipe. Now....I have a family fry bread recipe but I found one from Emeril online that is really good & easy. So, I guess you can say that I am a drugstore Indian.....is that like a rhinestone cowboy??
Indian Fry Bread
2 cups flour
1 T baking powder
1 t salt
1 T veggie oil (and more for frying)
3/4 c warm water
mix ingredients, turn onto a lightly floured surface and knead until dough is elastic and comes together. Shape into a ball and put in plastic bag or plastic wrap and keep in refrigerator for one hour.
Divide dough into 10 equal pieced (less if you would like larger breads) Roll out into a circle, make as thin as possible. Poke a hole in the center and in a frying pan filled with HOT veggie oil (I use about 3 cups) The oil is suppose to be 360*....I wait until I can drop the dough right in and its starts to fry (use a small piece of dough to check) cook for about 2 minutes flipping once. Drain on paper towels.
For a dessert sprinkle with powdered sugar and honey.
For a vegetarian meal top with pinto beans (whole beans or re fried) shredded lettuce, tomatoes, grated cheese and you have yourself an Indian Taco.
