Rolls baby!

I made these rolls on Thanksgiving.

They are AMAZING! So easy compared to other rolls I've tried in the past. Kali ate about a dozen of them. My whole family loved them.

Honey Lime Enchiladas



These are SOOOOO good! They have the sweetest taste and are very filling. The chicken would even be good in tacos.

Peanut butter chocolate chip cookies



1/2 cup butter, soft

1/2 cup peanut butter (creamy)

1/2 cup sugar

1/2 brown sugar

1tsp vanilla

1 egg

3/4 cup all purpose flouer

1/2 cup whole wheat flour

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1 pkg Milk chocolate chips

1/2 cup peanut butter chocolate chips

*sugar for rolling


Heat oven to 375*

Beat butter & PB add sugars/vanilla and beat until fluffy.

Mix in flower/baking soda/paking powder & salt beat on low.

Stir in chocolate chips/pb chips.

Roll dough into small balls (I use a small cookie scoop) roll in sugar.

Bake 9 minutes.

Accept praises and compliments from anyone who eats one :)

Vegetarian Lasagna

This is hands down one of the easiest and yummiest lasagnas I've ever made. I leave the pine nuts out and I use cottage cheese instead of ricotta.

Chipotle's Cilantro Lime Rice




Chipotle's Cilantro Lime Rice
1 1/2 cup white rice
1 T of butter
juice of 1/2 lime (MUST use real lime juice)
3 cups water
1 tsp salt
3 tbsp fresh chopped cilantro
3 tsp veg oil

In pan or pot boil water, add rice, butter & salt and reduce heat to low. Simmer until the water is gone and add oil & stir.
Remove from heat and toss in cilantro and stir in lime juice. Yummy!

Sweet tortilla chips

flour tortillas
vegetable oil
sugar
cinnamon
Heat 2T oil in pan.....cut tortillas into whatever shape you like, fry in 2 T of vegetable oil for about a minute, flipping 1/2 way (don't let them burn). Remove from oil and let them drain on a paper towel...sprinkle with sugar & cinnamon & enjoy!

Fruit dip

Mix one jar of marshmallow cream with 1 small 8 oz container of cream cheese....whip up and serve with fresh fruit! Yum!

Super Mashed Potatoes

3 large potatoes, cooked in the microwave for about 8 mintues (until easily pierced with fork)
while they are cooking....make some bacon (about 5 slices)
Mash up the potatoes with 4 T of I can't believe it's not butter
crumble bacon and add to potatoes
slice up some green onion and toss in
add salt & pepper to taste
mix in 1/2 cup plain greek yogurt
toss in one handful of cheddar cheese
and enjoy!
SOOOO good!

Orange Marmalade Rolls

I made orange marmalade rolls to giveaway to friends for Christmas. I ended up only giving two away and keeping the rest. They were SO good! I got the recipe here
on the Pioneer Woman's blog. But instead of making the dough from scratch I used frozen dough you can buy at the store. It saved me a lot of time & I've made them both ways and there is not much difference.

Chicken chow mein

Kali and Kai LOVE chicken chow mein.
I found a recipe in a Light and Tasty cookbook and made it a little more kid friendly.
Chicken Chow Mein
1 box of spaghetti noodles, cooked
2 chicken breasts, cut in bite size pieces
1 large handful of sugar snap peas or snow peas
1 large handful of baby carrots, sliced diagonally in bite size pieces
1/4 sweet onion, chopped
2 T veg oil, divided
Sauce
1/4 cup soy sauce
2 T brown sugar
1/2 teaspoon of sesame seed oil
1/4 teaspoon red pepper flakes
1/2 T vinegar
Heat 1 T oil in wok or skillet on Med heat. Cook chicken, remove from pan and drain on paper towel. Add 1 T oil to pan and cook carrots & onions until easily pierced with fork and add peas. I do not like peas mushy so I only cook a few more minutes. Put chicken back in pan and mix sauce ingredients. Add sauce to pan and heat through. Turn heat off and add (drained) noodles to pan and toss & serve!

Orange Marmalade Chicken

I saw this recipe on Cheeky Kitchen today and I decided to use my homemade marmalade & whip it up for dinner. It was really good & the kids liked it too. I served mine on white rice with a side of sugar snap peas that I boiled for a few minutes.

Taco Salad




iceberg lettuce, chopped

romaine lettuce, chopped

ground beef cooked with a little taco seasoning added
chopped tomatoes
grated cheese
plain greek yogurt (or sour cream if you like)
*toss ingrediants together & enjoy
(I did not include amounts so you can make this as big or small as you like)

**instead of using taco seasoning on the chips I used Lawry's seasoning salt
