Parm/Garlic Flatbread

I made pizza dough the other day and had some leftover while a Gold Cup soccer game was on I whipped this flat bread up. (p.s. soccer is life in our house) 
My husband, son and I chomped it up while we cheered on team USA....they fell flat. (get it??, ha!)

Neiman Marcus Dip

Can I get an Amen for dip?
I LOVE dip. In fact I consider it a full meal, unfortunately my husband does not but he loves this one.
This recipe is made with bacon bits....I cooked up some fresh bacon when I made and it was delish!

Caprese Salad

 


Sliced tomato (I used Roma) sliced whole mozzarella, fresh basil leaves (these beauties are from my Mom's garden) drizzle with Balsamic vinegar & season with salt & pepper. Seriously SOOO good! My baby Kora (she is 13 months) liked eating the mozzarella.

Hummus

I love hummus. No that is not right, I LOVE hummus!
I always buy it but I decided to try to make my own today & I am so glad that I did. It's easy and taste soooo good!



1 can (15.5 oz) Garbanzo Beans (a.k.a chick peas)
1/4 cup extra-virgin olive oil
juice of 1/2 a lemon
1 T Sea Salt
2 garlic cloves
1/4 tsp. cumin
 
put it all in a food processor (I used my baby food maker) and BOOM!
Yummy Hummus!
Serve with pita chips or veggies.

Steamed Dumplings


1/2 cup grated carrots
1 cup shredded Napa cabbage
2 T chopped green onions
1 T chopped cilantro
1 T Soy sauce
1 T hoisin sauce
Wonton wrappers
small bowl of water
Steamer
non-stick veggie spray

Heat steamer. Mix carros, cabbage, onions & cilantro in bowl. Add soy & hoisin sauce. Mix. Trus edges of wrapper lightly with water. Place spoonful of mixture in center of wonton wrapper & fold up. Repeat until mixture is gone. Spray steamer surface with cooking spray and add wontons. Cover and steam for 10 minutes. Remove dumplins. I like to serve with a mixture of soy & hoisin sauce for dipping and some white rice :) Enjoy!

Pretzels

We love eating pretzels when we go to the mall so I wanted to make my own at home. They are SO easy and YUMMY!

2 1/2 cups all purpose flour
1/2 t salt
1 t sugar
1 package of instant yeast
1 cup warm water

Mix ingredients in bowl (I used my kitchenaide with the bread loop) Knead the dough for 5 minutes. Lightly flour dough and place in plastic bag....close and let sit for 30 min.
Preheat oven to 500*
Roll your dough into long "snakes" and twist into pretzel shape. Dip into mixture of 1/2 cup warm water mixed with 2 T of baking soda.
Bake for 8 min
Brush with melted butter and top with course salt--enjoy!

Lettuce Wraps


1-1/4 pounds extra-lean ground turkey
1 package (16 ounces) frozen stir-fry vegetable blend, thawed
1/3 cup reduced-sodium teriyaki sauce
1/4 cup hoisin sauce
1 T reduced-fat creamy peanut butter
3 garlic cloves, minced
1 T rice vinegar
1 t sesame oil
4 green onions, chopped
10 iceburg lettuce leaves

Directions: In a large nonstick skillet coated with cooking spray, cook and stir the turkey over medium-high heat until no longer pink. Coarsely chop the mixed vegetables; add to the pan. Stir in the teriyaki sauce, hoisin sauce, peanut butter, garlic, vinegar and oil. Cook and stir over medium-high heat for 5 minutes or until heated through. Remove from the heat; stir in onions. Place a scant 1/2 cup turkey mixture on each lettuce leaf; fold lettuce over filling. Serve with additional hoisin sauce if desired. Yield: 5 servings.

YUM! YUM! YUM!! These are bomb!

Avocado Corn Salsa


1 can black eyed peas (drained)
1 can of white corn
1/2 bunch cilantro
4 green onions chopped
3 avocados, chopped
4 tomatoes, chopped
1 package Good Season Italian dressing (prepared as directed on package)
1 T course salt
1/2 fresh ground pepper

Combine ingredients, serve with chips & ENJOY!

Red Lobster Cheese Garlic Biscuits

2 cups buttermilk baking mix (I use pancake mix from Costco)
2/3 c milk
1/2 shredded cheddar cheese
1/4 butter, melted
1/2 t garlic salt
1/2 t Italian seasoning

Preheat oven 450* combine baking mix, milk, cheese until soft dough forms. Beat for 30 seconds. Drop dough by heaping tablespoons onto cookie sheet. Bake 8-10 minutes until golden brown. Combine butter, garlic salt and italian seasoning and brush over warm biscuits before removing from cookie sheet. Serve warm. YUM!

French Fries

6 potatoes ( I like the yellow golden kind)
1/4 cup extra-virgin olive oil
1T course salt
1/2 t freshly ground black pepper
3 lemons, zested
1 T freshly chopped parsley leaves
1 T garlic salt


Preheat the oven to 450 degrees F.
Wash potatoes and cut into fries. (I leave the skin on)
Place the potatoes into a bowl with cold water; this will help keep the fries crisp and white. Just before cooking, drain water and place on paper towel, pat dry completely. Put in a bowl; add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheets. Bake until light brown. Cook for approximately 30 to 40 minutes, turning frequently until golden brown. Less time if you made yours thin.

Remove from oven. Add lemon zest, parsley, garlic, salt and pepper. Toss well and ENJOY!
