Super Mashed Potatoes
while they are cooking....make some bacon (about 5 slices)
Mash up the potatoes with 4 T of I can't believe it's not butter
crumble bacon and add to potatoes
slice up some green onion and toss in
add salt & pepper to taste
mix in 1/2 cup plain greek yogurt
toss in one handful of cheddar cheese
and enjoy!
SOOOO good!

Orange Marmalade Rolls
I made orange marmalade rolls to giveaway to friends for Christmas. I ended up only giving two away and keeping the rest. They were SO good! I got the recipe here
on the Pioneer Woman's blog. But instead of making the dough from scratch I used frozen dough you can buy at the store. It saved me a lot of time & I've made them both ways and there is not much difference.
Chicken chow mein
Kali and Kai LOVE chicken chow mein.
I found a recipe in a Light and Tasty cookbook and made it a little more kid friendly.
Chicken Chow Mein
1 box of spaghetti noodles, cooked
2 chicken breasts, cut in bite size pieces
1 large handful of sugar snap peas or snow peas
1 large handful of baby carrots, sliced diagonally in bite size pieces
1/4 sweet onion, chopped
2 T veg oil, divided
Sauce
1/4 cup soy sauce
2 T brown sugar
1/2 teaspoon of sesame seed oil
1/4 teaspoon red pepper flakes
1/2 T vinegar
Heat 1 T oil in wok or skillet on Med heat. Cook chicken, remove from pan and drain on paper towel. Add 1 T oil to pan and cook carrots & onions until easily pierced with fork and add peas. I do not like peas mushy so I only cook a few more minutes. Put chicken back in pan and mix sauce ingredients. Add sauce to pan and heat through. Turn heat off and add (drained) noodles to pan and toss & serve!
